Summer Squash & Zucchini Mozz Rollups
Farmer’s Market Delight
Summer is in full swing! The days are long and local farmers markets are buzzing with people, pups and bountiful produce. The @SurfCityfFarmersMarket on Long Beach Island, NJ certainly brightens up a Monday morning with a variety of local artisans and of course, fresh local ingredients.
The best part about a farmers market is the opportunity to use local, seasonal ingredients to whip together a dish, any time of year. This recipe combines the bliss of summer grilling with the Surf City farmer’s market harvest for a flavorful veggie bite that can be served as an appetizer or the main squeeze. Pairs perfectly with a waterfront sunset and a glass of crisp white wine.
Ingredients (serves 2)
1 large summer squash
1 large zucchini
1 large carrot
Cherry tomatoes
Fresh Mozz
Fresh garlic
Red onion
1 Lemon
Extra Virgin Olive Oil
Fresh herbs
Prep the veggies
Cut the squash and zucchini long ways so the pieces are similar in size. Spread out on a pan or large plate and add salt and pepper to drain the moisture. Let sit for a few minutes and soak of excess water with a paper towel
Cut carrot into 4 long pieces
Grill zucchini, squash and carrot until lightly browned (do not burn)
Preheat the oven to 375
Bring it all together!
While the oven is heating, quarter the cherry tomato into quarters and 3 garlic cloves
Chop mozz into 4 thick slices
Layer zucchini, squash, mozz, cherry tomato and garlic and roll together tightly
Repeat until all of the zucchini and squash are used
Pack tightly into a pan. Top with cherry quartered cherry tomatoes, garlic, grilled carrots, red onion and a hearty amount of extra virgin olive oil and squeezed lemon
Bake for 20ish minutes until the tomatoes are cooked and the garlic is browned
Separate the rolled pieces onto plate and drizzle with the excess sauce in the pan for the finishing touch
